Blair Hensley and his brother Ethan have opened a new restaurant called The Original Floridian Bar and Grill in St. Joe, just outside Dade City. This establishment is the latest addition to their chain of ten restaurants operating under the Florida Cracker label throughout the state. The newest location uniquely features dozens of original signs from local businesses and farms that Hensley personally tracked down for its walls. Each restaurant in their chain offers a distinct concept and menu, but this one specifically celebrates Pasco County history and culture. The menu includes items named after local families and landmarks such as Barthle Burgers, Abraham’s catfish, and Wilton’s Chargrilled chicken sandwich. Local ingredients like gator tail from Lacoochee and shortbread from Dade City are prominently featured in the kitchen offerings.
