Saddlebrook Resort Unveils Upscale GOAT Kitchen Bar with Elevated Sports Dining

Saddlebrook Resort has launched GOAT Kitchen & Bar as part of its $92 million renovation aimed at restoring the property as the jewel of Wesley Chapel. The new venue blends upscale aesthetics with a sports-centric atmosphere, offering NHL, NFL, NCAA and major international sporting events across numerous screens while maintaining a refined ambiance suitable for both casual viewing and date nights. Executive leadership, through Director of Restaurants Edwardo Torres, emphasizes that the concept has no direct local equivalent and focuses on elevating traditional bar fare rather than relying on standard offerings. Chef Mark Davis has reengineered classics with techniques such as sous-vide wings, Wagyu smashburgers, slow-braised short rib nachos and hand-cut tortilla chips, accompanied by southern fried chicken, pan-seared filet tips and Asian steak salads. The menu retains longtime resort traditions including New England-style clam chowder while pairing elevated food with themed beverages tied to marquee events like the Masters, Wimbledon and the Super Bowl, alongside signature cocktails and local craft beers. Although GOAT welcomes all guests, the resort’s paid parking policy adds a cost consideration for non-resort visitors, even as management continues efforts to broaden access to dining and amenities beyond exclusive memberships during its broader revitalization.
